A new way to savor Japanese Golden-Eye Snapper

Taikin Suidobashi Main Store is a restaurant where Japanese Golden-Eye Snapper takes center stage. Our signature dish is the Japanese Golden-Eye Snapper Rice Box: tender charcoal-grilled Japanese Golden-Eye Snapper served generously over rice in a traditional lacquered box. Its delicate umami, rich flavor, and smoky aroma come together in a deeply satisfying meal unique to Japanese Golden-Eye Snapper. Our theme is “Edo tradition × wholesome dining.” We combine the Edo tradition of serving meals in lacquered boxes with the distinctive taste of Japanese Golden-Eye Snapper and a health-conscious approach to dining. A new Japanese delicacy beyond unagi. Our ambition is to make Japanese Golden-Eye Snapper Japan’s next great delicacy.

Our Story with Japanese Golden-Eye Snapper

Our owner, Tsuchiya, comes from Shimoda in Izu, which boasts Japan’s largest catch of Japanese Golden-Eye Snapper. Japanese Golden-Eye Snapper has been a familiar part of his life since childhood.

Its pale pink flesh, rich yet refined sweetness, tender texture, and relatively few small bones make Japanese Golden-Eye Snapper enjoyable for guests of all ages.

We use a special simmering sauce inherited from the inn once operated by the owner’s father in Shimoda. The sauce has been continuously replenished and aged for over 50 years. We have continued to refine this inherited flavor, adding Kagetora Cho Karakuchi, a renowned sake from Niigata, to bring out even more of the Japanese Golden-Eye Snapper’s natural umami.
